What We’ve Done So Far
Cutting Waste
- Reduced food waste to just 2% with smart menus that turn trimmings into stocks, sauces, and extras.
- Bin bags and napkins are fully compostable.
- EPOS prints receipts only on request—saving 800 rolls a year.
- Replaced postcard bill holders with durable wooden ones, cutting paper use by over 120 kg a year.
Saving Water & Energy
- All kitchen, hallway, and bathroom lights are on motion sensors.
- The Purty Loft’s taps use infrared sensors to cut down on water waste.
- A kitchen soak tank saves 91,000 litres of water each year.
Sourcing Smarter
- Source local, seasonal produce to reduce food miles.
- All suppliers are expected to meet clear sustainability standards.
Community First
- Refunds from recycled bottles fund free sanitary products in our bathrooms; surplus goes to local charities chosen by staff.
- We support raffles, match staff donations, and back initiatives like the Focus Ireland sleep-out.
- Host events that bring people together - art classes, Pilates, Veganuary, and more.
What’s Next
- Working toward a zero waste kitchen—it’s ambitious, but we’re up for it.
- Just ordered a VITO oil filtration system to cut oil use by up to 50%.
- Always on the lookout for better ways to cook, serve, and source with care.
